Roasted Root Vegetables

with Red Fork Mashed Potato Seasoning Sauce

Make this array of roasted root vegetable even more colorful with tri-colored carrots.

Serves 4, as a side


1 ½    pounds mixed root vegetables, such as parsnips, sweet potatoes, radishes or carrots, diced about 1 inch

1        pouch (4 ounces) Red Fork Mashed Potato Seasoning Sauce

Olive oil

Salt to taste


  1. Pre-heat oven to 400 degrees
  2. In a medium bowl, toss the root vegetables with just enough oil to lightly coat, about 1 teaspoon.
  3. Spread in a single layer on a sheet tray or 8 X 11 baking dish. Roast in oven until nearly done, but still crisp, about 20 minutes.
  4. Remove veggies from the oven and increase the oven temperature to 450 degrees.
  5. Pour the Red Fork Seasoning Sauce over the veggies and stir to coat. Return to the oven and roast until fork tender and brown, about 10 minutes.
  6. Taste and season with salt.  Serve hot.
