Veggie Sloppy Joe

with Red Fork Sloppy Joe Skillet Sauce

Save time by using canned beans and a pouch of cooked lentils found in the produce section of large grocery stores. 

Serves 3-4


1 tablespoon vegetable oil

1 small onion, cut into small dice

1 pouch (8 ounces) Red Fork Sloppy Joe Skillet Sauce

1 can (14.5 ounces) diced tomatoes, undrained

1 ¼ cups (8 ounces) cooked or canned, drained white beans

1 cup (8 ounces) cooked black or green lentils

Whole grain burger buns, sliced, toasted

Feta or goat cheese, crumbled


  1. Heat the oil in a large non-stick skillet over medium heat. Add onion and cook until onion is soft, about 5 minutes.
  2. Stir in Red Fork Sauce, tomatoes and ½ cup water; heat to simmer. Stir in beans and lentils. Simmer, stirring often, for 5 minutes.
  3. Serve mixture on toasted buns topped with cheese.
